Once a year, is the rhythm chosen by Chef Sana Gamas to renew the menu. The challenge is a complex one. It must offer the widest possible range of new products while remaining faithful to the spirit of the place and the recipes that make the restaurant so successful.
A new menu with many influences
A year of imagination, reflection and accumulation of notes which, over the months, form recipes, then technical sheets and finally dishes. They are carefully tested, shared, tasted and re-dropped before being retained or discarded.
This is how, with a lot of passion and even more work, this new card was gradually formed.
It is the result of many influences, gleaned here and there, in travels and encounters.
